  1. 4chicken breasts
  2. 1smoked sausage
  3. 1medium
  4. 1green pepper
  5. 2 canRotel mild diced tomatoes
  6. 2 cuprice
  7. 3 cupchicken broth
  8. 1 tbsptobasco sauce
  9. 1 tbspcajun seasoning
  10. 1vegetable oil

  1. 1

    In medium to large pot, trim and dice chicken. Cut sausage into 1/2 medallions. Cook medium high with a little oil, chicken broth seasoning, cajun seasoning, and tobasco to taste

  2. 2

    Scoop out meat, leaving drippings

  3. 3

    Dice onion and pepper, heat them in drippings til onions are clear.

  4. 4

    Add the cooked meat back to veggies, add rice, broth, drained rotel tomatoes, and desired level of spices

  5. 5

    Cooked covered on medium heat til desired level of "doneness" of rice is achived (I like is so mushy)
