Ingredients

  • 2 1/2 cupall-purpose flour
  • 2 cupSugar
  • 1 1/2 tspGround Cinnamon
  • 1 tspSalt
  • 1/2 tspBaking Powder
  • 1/2 tspBaking Soda
  • 1 cupvegetable oil
  • 4eggs
  • 2 cupShredded Zucchini
  • 1/2 cupChopped Walnuts (optional)
  • Frosting
  • 3 ozcream cheese, softened
  • 1/4 cupbutter or margarine, softened
  • 1 tbspmilk
  • 1 tspvanilla extract
  • 2 cupconfection sugar

Steps

  1. 1

    In a mixing bowl combine flour, sugar, cinnamon, salt, baking powder and baking soda

  2. 2

    combine oil and egg. add to dry ingredients and mix well.

  3. 3

    add Zucchini. stir until thoroughly combined.

  4. 4

    fold in walnuts if desired

  5. 5

    pour into a greased 13 inch by 9 inch by 2 inch baking pan

  6. 6

    bake at 350 for 35-40 mins or until a toothpick comes out clean

  7. 7

    for frosting. in small mixing bowl beat cream cheese, butter, milk, and vanilla until smooth.

    add confection sugar and mix well.
