Ingredients

  1. 2 lbpotatoes, peeled and cubed
  2. 2 tbspsour cream our softened cream cheese
  3. 1 largeegg yolk
  4. 1/2 cupcream, for a lighter version chicken broth
  5. 1salt and freshly ground black pepper
  6. 1 tbspolive oil for the pan
  7. 1 3/4 lbground beef or ground lamb
  8. 1carrot, peeled and chopped
  9. 1onion, chopped
  10. 2 tbspbutter
  11. 2 tbspall-purpose flour
  12. 1 cupbeef stock or broth
  13. 1/2 cupfrozen peas
  14. 1 tspsweet paprika
  15. 2 tbspcopied fresh parsley leaves

  1. 1

    boil potatoes in salted water until tender (about 12 minutes). drain potatoes and put them into a bowl

  2. 2

    combine sour cream, egg yolk and cream. Add cream mixture to potatoes and mash until almost smooth

  3. 3

    while potatoes boil, preheat a large skillet over medium heat

  4. 4

    heat up oil and brown meat for 3 or 4 minutes. Season with salt and pepper

  5. 5

    if you are using lamb spoon away some of the drippings

  6. 6

    add chopped carrots and onion to the meat. Cook for 5 minutes stirring frequently

  7. 7

    in a second small skillet over medium heat cook butter and flour together 2 minutes. whisk in broth and let thicken 1 minute

  8. 8

    add gravy to meat and vegetables, stir in peas.

  9. 9

    preheat broiler to high

  10. 10

    fill a small rectangular casserole with meat and vegetable mixture

  11. 11

    spoon potatoes over meat evenly and top potatoes with paprika

  12. 12

    broil 6 to 8 inches from the heat until potatoes are evenly browned

  13. 13

    top casserole dish with chopped parsley and serve
