
Cranberry Orange & Walnut Muffins

Preheat oven to 375°F

In a small bowl, soak craisins in 2 cups hot water. Set aside.

In a large bowl, combine flour, sugar, baking powder, baking soda, ground nutmeg, ground cinnamon, salt, and grated orange peel. Mix thoroughly.

Add in canola oil. Mix should be crumbly. Set aside.

In small bowl, lightly beat eggs. Mix in orange juice and vanilla extract.

Pour wet mix into dry ingredients and stir until moist.

Strain craisins, being careful not to squeeze craisins.

Fold craisins and nuts into batter.

Fill greased or paper-lined muffin cups to just under the brim.

Bake for 18-20 minutes, until a toothpick, when inserted, comes out clean.

Cool in pan for 10 minutes.
