2Boneless skinless chicken breasts (cut into strips)
1/2 cupButter (room temperature)
1 cupExtra virgin olive oil
2 cupFine breadcrumbs
1Garlic clove
1Salt and pepper

Season chicken with salt and pepper.

Microwave butter and garlic on high for 1 minute

Coat chicken in butter mixture and roll in breadcrumbs.

Heat oil in large skillet over medium heat.

Cook chicken on each side for 3-4 minutes or until no longer pink inside.
