  • 2Boneless skinless chicken breasts (cut into strips)
  • 1/2 cupButter (room temperature)
  • 1 cupExtra virgin olive oil
  • 2 cupFine breadcrumbs
  • 1Garlic clove
  • 1Salt and pepper

    Season chicken with salt and pepper.

    Microwave butter and garlic on high for 1 minute

  3. 3

    Coat chicken in butter mixture and roll in breadcrumbs.

  4. 4

    Heat oil in large skillet over medium heat.

  5. 5

    Cook chicken on each side for 3-4 minutes or until no longer pink inside.
