  1. 600 gramscarrots peeled and chopped
  2. 100 gramsleeks chopped ( or onion)
  3. 1 tbspolive oil
  4. 1 tspground ginger
  5. 500 mlvegetable stock
  6. 1 piecepeeled fresh ginger
  7. 1 clovegarlic

Steps

  1. 1

    Sautee the chopped leek and crushed garlic until soft and a bit golden.

    Add ground ginger to the pan with the sautee leek and cook out for 1 minute

  3. 3

    Add carrots chopped and fresh ginger to pan. Add stock and simmer for 20 minutes.

    Blend to desired texture.
