Ingredients

  1. 1 tbspolive oil
  2. 4boneless skinless chicken breast halves
  3. 3potatoes, peeled and chopped
  4. 1onion, sliced
  5. 14 ozcoconut milk
  6. 1/2 tspsalt
  7. 1/2 tsppepper
  8. 1 1/2 tspcurry powder
  9. 1 tsphot sauce (optional)
  10. 1 cupchicken broth
  11. 10 ozfrozen peas
  12. 3 tbspflaked coconut, toasted (optional)

    Heat oil in a medium flying pan. Add the chicken and brown on both sides.

  2. 2

    Place the potatoes and onion in the crock pot. Place the chicken on top.

  3. 3

    Combine the coconut milk, salt, pepper, curry powder, hot sauce (optional), and chicken broth in a bowl and mix thoroughly. Add to the crock pot.

  4. 4

    Cover crock pot and cook on low for 6-8 hours.

  5. 5

    Half an hour before serving, break up the chicken and add the peas.

  6. 6

    Half an hour before serving, break up the chicken and add the peas. Just before serving, thoroughly stir the mixture and sprinkle the top with the toasted coconut if desired.

  7. 7

    Serve over rice our Asian noodles.
