1 cupOat bran flakes cereal
1 cup7-grain flakes cereal
1/4 cupWheat germ
1/2 tspBlack pepper
1/2 tspSalt
1 tspPaprika
1/4 tspCelery seeds
1/4 cupFresh parsley, minced
1/4 cupOnion, minced
1 eachWhole fryer chicken, cut up
4 eachEgg whites
1/2 cupSkim milk

Preheat oven to 375°F. Blend breaking ingredients in a food processor until fine.

Remove and discard skin from the chicken. Whisk together egg whites and milk. Dip chicken in egg mixture, then dust with breading.

Place on lightly oiled baking sheet. Bake in the middle of the oven until chicken is crisped and cooked through, about 45 minutes. Turn meat twice during cooking.
