  • 1 largecarrot
  • 1 largesweet potato
  • 2 canCoconut milk (reduced fat)
  • 2 tspBrown sugar /honey
  • 2 tspPeanut butter
  • 1 1/2 cupJasmine rice

    Fry finely chopped red onion

  2. 2

    Fry bite sized chicken pieces

  3. 3

    Add curry paste and coconut milk to onion, add chicken

  4. 4

    Add peanut butter and sugar

  5. 5

    Add carrots, and precooked sweet potato

  6. 6

    Simmer
