400 gButter cream

Cut the genoise into three slices crosswise

Prepare the butter cream and mix in the melted chocolate
3

Lightly moisten each slice of genoise with stock syrup.

Lightly spread each slice of genoise with butter cream and sandwich together

Lightly coat the top and sides with chocolate glace.
