Garden Baked Ziti with Sausage

I'm ALWAYS looking for a clever way to slip in veggies to my kids... this one is a no brainer. Definitely not low-cal... but it's good for tummy love!

Ingredients

  1. 1 packageziti pasta
  2. 1 lbItalian sausage
  3. 1 tablespoonolive oil
  4. 3 clovesgarlic, minced
  5. 2 cupsmushrooms, diced
  6. 2zucchini, halved, sliced
  7. 4 handfulsfresh spinach
  8. 1egg, beaten
  9. 32 oz.Ricotta cheese
  10. 2 jarsmarinara sauce
  11. 1.5 lbsmozzarella cheese
  12. 1 cupshredded parmesan
  13. Fresh basil

Cooking Instructions

    Break up and brown sausage in a large skillet pan, drain, set aside, reserved drippings

  2. 2

    Add oil to pan and saute veggies adding in order, zucchini, mushrooms and garlic. Until slightly tender. Season with salt and pepper. Remove from pan, set aside.

    Saute spinach until slightly wilted, set aside with veggies to cool

    Boil ziti in salted water 7 mins, drain, set aside

  5. 5

    In a large mixing bowl mix egg, ricotta, 1 lb mozzarella, sausage, veggies, pasta, and 1 jar of sauce

    Add mix to a large slightly greased casserole dish. Top with pasta sauce, remaining mozzarella, and parmesan

  7. 7

    Bake, covered, in a 375 degree oven for about 1 hour, uncovering at the end so the cheese can brown.

  8. 8

    Garnish with fresh basil
