Ingredients

  1. 1 kgcrayfish washed (wash with clean rubber gloves to avoid getting hurt)
  2. 25 ggrated coconut
  3. 4tomatoes, diced
  4. 3 tbspgroundnut oil
  5. 2 tbspany hot curry powder
  6. 200 mlcoconut milk
  7. to tastesalt and freshly-ground black pepper,

Steps

  1. 1

    Heat the groundnut oil in a pan, add the crayfish and cook until pink. Season with salt and freshly-ground black pepper. Add the curry powder and stir.

  2. 2

    Add the tomatoes, grated coconut and coconut milk. Bring the mixture to a simmer and cook, covered, for 15 minutes, or until the tomatoes are soft.

  3. 3

    Cover and simmer for 10 minutes. Serve with rice.
