Ingredients

6 servings
  • 1rapeseed oil
  • 1carrot chopped
  • 1onion, chopped
  • 1celery, chopped
  • 1butternut squash, chopped
  • 1red pepper, chopped
  • 1 1/2 litervegetable stock
  • 250 mldouble cream

Steps

  1. 1

    Soften the chopped vegetables in the rapeseed oil.

  2. 2

    Once softend put into a large sauce pan And add the vegetable stock.

  3. 3

    Simmer in till all the vegetables are soften.

  4. 4

    Take off the heat and put the vegetables and the stock into a blender (or use a stick blender) add the cream and blend in till smooth

  5. 5

    Season till taste and serve with bread.
