Put the oil into a saucepan and pre heat

Add the chopped onions and fry until soft

Mince the garlic and add to the onions, fry for a few minutes until soft.

Add red wine vinegar and sizzle until reduced.

Add passata and tomato puree and bring to the boil.

Simmer for about 20 minutes until the sourness of the tomatoes has gone. Add salt and pepper to taste now.

Take a stick blender and blend until smooth. S

Spoon over your favourite pasta, sprinkle some decent Parmesan over and enjoy!
