Ingredients

  1. 1 1/2 lbSmall chicken cutlets (8 to12)
  2. 1 dashKosher salt n pepper
  3. 2 tbspOlive Oil
  4. 1 1/2 pintsGrape or Cherry Tomatoes
  5. 3/4 cupDry White Wine
  6. 4Scallions, Sliced
  7. 2 tbspFresh Tarragon leaves, chopped

Cooking Instructions

  1. 1

    Season the chicken w/ 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat oil in a large skillet over medium-high heat

    Working in 2 batches, cook the chicken until browned and cooked through, 2 to 3 ,minutes per side. Transfer to plates

  3. 3

    Add tomatoes to the skillet and cook over medium-high heat, stirring occasionally, until they begin to burst, 2 to 3 minutes

    Stir the scallions and tarragon leaves and serve w/ chicken
