Ingredients

  1. 2 cuponions
  2. 1 tbsppeanut or vegetable oil
  3. 1/2 tspcayenne pepper
  4. 1 tsppeeled and grated fresh ginger
  5. 1 cupchopped carrots
  6. 2 cupchopped sweet potato
  7. 4 cupvegetable stock or water
  8. 2 cuptomato juice
  9. 1 cupsmooth peanut butter
  10. 1 tbspsugar (optional)
  11. 1 cupspring onions
  12. 1 cupchives or chopped scallions
  13. 1pan to saute and boil
  14. 1Blender or food processor
  15. 1Cooking spoon

Steps

  1. 1

    Saute the onions in oil until it is translucent then stir in the cayenne pepper and ginger.

  2. 2

    Add carrots and saute for 1-3 minutes then mix in the potatoes and stock.

  3. 3

    Bring to boil on medium-high heat then let it simmer on lower heat until the vegetables are tender.

  4. 4

    In a blender, purée the mixture together with the tomato juice.

  5. 5

    Put the purée back in the own and mix in peanut butter on medium-low heat.

  6. 6

    Add the sugar to taste. Add more water, stuck our juice for thinner soup.

  7. 7

    Serve hot with spring onions and chives.
