Ingredients

15 minutes
4 servings
  • 150 gmall purpose flour
  • 1.5ts baking powder
  • to tasteSalt
  • Water as needed to knead a dough
  • 2 Tboil
  • 100 gmgrated carrots
  • 100 gmspring onion whites chopped fine
  • 100 gmboiled sweet corn kernels
  • 150 gmshredded boiled chicken breast pieces
  • 1 tbcrushed black pepper
  • 1 Tboregano powder
  • 4-5garlic pearls chopped finely
  • 100 gmspinach leaves chopped
  • 50 gmblack olives sliced
  • 150 gmshredded mozzarella cheese
  • Ketchup for serving

Steps

15 minutes
  1. 1

    Combine flour,salt to taste and baking powder on a bowl and add just enough water to knead a stiff dough

  2. 2

    Rest the dough covered for 15 minutes

  3. 3

    Meanwhile sauté spring onion whites, garlic and carrots using 2 Tb oil for 5-7 minutes on medium-Low heat

  4. 4

    Thrown in the sweet corn kernels and chicken and sauté for another 5 minutes

  5. 5

    Add pepper crushed,salt,oregano to the mix and saute

  6. 6

    Finally add the spinach leaves and sauté till the spinach wilts

  7. 7

    Keep aside 4-5 Tb of cheese and add the rest of the cheese and olives to the mix

  8. 8

    Blend well and take off heat

  9. 9

    Roll Golf ball sized dough into small disc to fit into a standard muffin tray cups

  10. 10

    Grease the muffin cups and place the flour disc into each cup and press gently

  11. 11

    Fill up each cup with the mix prepared leaving half an inch gap on the top

  12. 12

    Add the rest of the grated cheese on each

  13. 13

    Bake for 15-20 minutes at 220degree celcius

  14. 14

    Serve warm with ketchup or any dips of your choice
