When I made carrot Juice, I make this carrot cake with pulp of carrot.

Easy quick no messing cup cakes. Wanted to make them crispy inside but hubby said bit chewy like caramel but still yummy. Got 23g down to 79 calories so not bad. Can't wait to try one.
