Ingredients

  • Omelette
  • 6 largeeggs
  • 1 dashof milk
  • 1 dashof salt and pepper
  • Filling
  • 1 dozensundried tomatoes (chopped)
  • 100 gramsPuy Lentils
  • 1 cupSweetcorn
  • 6 sliceFacon/bacon (fried)
  • 4 tbspJalepeño salsa
  • 1/4 cupChopped artichoke hearts
  • 1 cupGrated cheese/mozzarella
  • 2sausages (cooked and chopped)

Steps

  1. 1

    Break eggs into a bowl lightly whisk with milk, salt and pepper.

  2. 2

    Fry sausages and bacon, chop.

  3. 3

    Combine other filling ingredients into a bowl and add fried ingredients.

  4. 4

    Add eggs to the frying pan, wait until semi solid and add the filling ingredients to one half.

  5. 5

    Leave for a few minutes to heat through and then flip the unfilled half of the omelette onto the filling.

  6. 6

    Make sure everything is heated through. Get your plates out and tuck in for breakfast, lunch or dinner!
