Ingredients

  1. 6 cupdiced tomatoes
  2. 314 oz cans tomato sauce
  3. 9stock celery chopped
  4. 5 mediumonions chopped
  5. 1 1/2 cupGreen peppers chopped
  6. 3jalapeños chopped
  7. 6 clovegarlic minced
  8. 3/4 cupcider vinegar
  9. 2/3 cupWhite sugar
  10. 3/4 cuplime juice
  11. 4 tspcoriander
  12. 3 tspsalt
  13. 3 tspchopped cilantro leaves (dry)

Cooking Instructions

    Cook tomatoes, sauce, celery, onions, garlic, peppers for 5 minutes.

    Add sugar, lime juice, salt and spices.

  3. 3

    Reduce heat and boil gently.

  4. 4

    Stir frequently for 45 minutes, making sure it doesn't stick.

  5. 5

    When slightly thickened, pour into hot Mason jars and seal.

    Makes 8 pints.
