I'm not a morning person so making time for breakfast is hard. I make these on weekends and eat them for breakfast all week. I try to stick to the Adkins diet also so this works for low carb breakfast. Can also be made using only egg whites if you're into that.

  • 24unit nonstick small muffin pan
  • 6eggs
  • 1cream (or milk)
  • 1Your preferred shredded cheese
  • 1salt & pepper to taste
  • 1Desired Fillings

Steps

    Preheat oven to 350°F

  2. 2

    Cut Fillings (ex. onions, mushrooms, ham, bacon) into tiny pieces

  3. 3

    Combine eggs, cream, cheese, salt and pepper in small bowl

  4. 4

    Mix well

  5. 5

    Fill wells of muffin pan with pieces of filling

  6. 6

    Pour egg mixture over filling

  7. 7

    bake 20 minutes at 350°F
