  1. 2yams
  2. 2 tbspbrown sugar
  3. 1/2 tspground cinnamon
  4. 2salmon filets
  5. 1 tspbutter
  6. 1 packagesfresh spinach
  7. 1 tbspolive oil

Cooking Instructions

    Peel and cut yams into chunks. Place in saucepan with water, cover and bring to boil. Boil for 15-20 minutes

    Heat heavy skillet. Put washed and patted dry salmon skin down on skillet. Top with butter. Cook undisturbed for 10-15 minutes.

    Heat oil in pan and waite spinach for about 2 minutes.

    Drain and mash yams with sugar and cinnamon.

  5. 5

    Serve with mashed yams on bottom topped with spinach and the salmon (remove skin prior to serving)
