Ingredients

15 minutes
4 servings
  1. 2 bunchPalak (roughly chopped)
  2. 1small potato
  3. 200 gramspumpkin
  4. 1bringal
  5. 8-10beans
  6. 6-7broad beans
  7. 1/2carrot half of a small cauliflower
  8. Green peas half cup
  9. 6Badi or wadi
  10. 2Green chilies
  11. Panch phoron ( consist of cumin fenugreek mustard nigella fennel
  12. 2 tablespoonsmustard oil
  13. 2 table spoonMilk or cream
  14. Salt to taste
  15. 1 tblspTurmeric powder
  16. 1 teaspoonGinger paste
  17. 1/2 teaspoonSugar

Steps

15 minutes
  1. 1

    Peel wash and cut all the vegetables into cubes.

  2. 2

    Chop the spinach roughly.

  3. 3

    Heat mustard oil and fry the badi. keep aside.

  4. 4

    In the remaining oil tempered the oil with panchforon and slit green chilies.

  5. 5

    Add all the vegetables and saute for 5 minutes.

  6. 6

    Add salt and a little turmeric powder..

  7. 7

    Add spinach and badi.add ginger paste.

  8. 8

    Saute it until the spinach mix properly with all the vegetables.

  9. 9

    Cover the pan till all the vegetables soften and realise the water.Add half teaspoon sugar.

  10. 10

    Add 2 table spoon milk or cream before serving.

  11. 11

    Serve it with hot boiled rice.
