Heat an omelette PAN, add oil, and fry the two eggs - sunny side up. The yolks should be intact but runny.

Gently slide the fried eggs onto the toasted slice of bread. Sprinkle with salt, pepper, chopped onion, chillies, cilantro and finally the shredded cheese.

Place into a pre-heated convection oven (150 Celsius), for about 5 minutes, till the cheese melts down.

Serve warm. The combination of the fresh vegetables, runny yolk, melted cheese and toast is absolutely divine!
