Ingredients

  1. 1 1/2 cupBob's Red Mill Gluten Free All-Purpose flour
  2. 2 1/2 tspGround coriander
  3. 1 1/2 tspBaking powder
  4. 3/4 tspSalt
  5. 1/2 tspBaking soda
  6. 1/2Xanthan gum
  7. 1/3 cupFresh cilantro
  8. 3/4 cupPlain whole-milk yogurt or Greek yogurt

Steps

  1. 1

    Sift first 5 ingredients into medium bowl.

  2. 2

    Stir in cilantro.

  3. 3

    Add yogurt and stir with fork just until dough holds together, adding more flour or yogurt by tablespoonfuls until the dough is soft and smooth.

  4. 4

    Divide into equal pieces and flatten with floured hands.

  5. 5

    Heat olive oil over medium heat and heat dough until puffed and browned. Flip and cook other side.

  6. 6

    Store unused dough in sealed container between parchment paper for up to four days.
