  1. 1/4 tspCrushed red pepper
  2. 1 canCannelli beans, drained and rinsed
  3. 1 canGarbanzo beans, drained and rinsed
  4. 12 ozChicken sausage with Mediterranean seasoning cut into 1/4 inch rounds
  5. 1 canWhole tomatoes, drained and chopped
  6. 1Whole bay leaf
  7. 1 1/2 cupCanned low sodium chicken broth
  8. 1 tspDried thyme
  9. 1 smallescarole chopped
  10. 1 1/4 cupGrated Parmesan cheese
  11. 2 tbspChopped parsley
  12. 1 dashSalt and pepper

Steps

  1. 1

    Combine sausage, beans, tomatoes, broth, bay leaf, thyme and red pepper in slow cooker and cook on low heat setting for 4 hours.

  2. 2

    Stir in escarole and cook an additional 5 to 8 minutes, until just wilted. Stir in Parmesan cheese and parsley.

  3. 3

    Season to taste with salt and pepper and serve
