I wanted to make Tinklee's stacked potato recipe, but modify it to make vegan. This is the sauce I came up with.

I wanted to make Tinklee's stacked potato recipe, but modify it to make vegan. This is the sauce I came up with.
Steps

Melt butter in small saucepan over medium heat.

Add flour to butter and stir for about 3 minutes.

Add almond milk slowly while whisking constantly.

Add spices, salt and pepper. Taste and adjust seasonings to your liking.

Stir in nutritional yeast. Sauce should be thickening up nicely.

I made this specifically for the potato stackers. I added a little of this sauce between each layer of potatoes. It was fantastic!

I'm thinking this will be good in any casserole that calls for cheese sauce. I think I'll try it next on a broccoli and rice casserole!
