  1. dry rub
  2. 2scoth bonnet peppers, chopped
  3. 2 clovegarlic, chopped
  4. 2 stickscallions, chopped
  5. 2 tbspfresh thyme, chopped
  6. 1 1/2 tspground cloves
  7. 1 1/2 tspground cinnamon
  8. 1 1/2 tspallspice
  9. 1 tspsalt
  10. 1/2 tspblack pepper
  11. chicken
  12. 3 lbchicken legs and thighs
  13. 2 tbspolive oil
  14. 2 tbspworcestershire sauce

Cooking Instructions

    Preheat oven to 425°F.

    Mix the dry rub ingredients together. Score chicken on skin side. Apply dry rub to chicken.

    In a dutch oven heat olive oil and then add chicken. Cook and brown chicken for about 10 minutes. Add worcestershire sauce and stir.

    Cover chicken and place in oven. Cook for about 20 minutes.

  5. 5

    Serve.
