Ingredients

  • I small pumpkin wedges
  • 2-3 tbspolive oil
  • 1 tbsplemon juice
  • to tasteSalt and pepper,
  • 2-3garlic cloves (chopped)
  • 1green chilli (chopped)
  • 2 tbspmint roughly chopped
  • 2 tbspcoriander roughly chopped
  • 100 gfeta cheese crumbled
  • 1/2 cupcooked chickpeas, drained and rinsed
  • 1/2 cuproasted pumpkin seeds

Steps

  1. 1

    Cut the pumpkin into wedges (2cm thick).

  2. 2

    Coat the pumpkin wedges with olive oil and roast at 200 C for 25- 30 minutes or until they are soft and golden. Set aside to cool.

  3. 3

    Combine garlic, mint, coriander, lemon juice, chilli, chickpeas & feta cheese in a bowl and season with salt and pepper.

  4. 4

    Combine pumpkin wedges and the mixture, toss gently.
