Heat oven to 300°F

Take each leaf of kale and carefully rub off any dirt that may be on the leaves

Rip off the leaves of kale off the stalk. Throw leaves into salad spinner to remove excess water or pat dry with towel.

In a large bowl, toss kale with oil and salt. Transfer kale to 2 baking sheets in a single layer.

Bake at 300°F for 25 minutes or until crispy. Once ready, pull out the oven sheets but keep oven running. Sprinkle the cheese evenly over the kale. Put sheets back into oven until the cheese has melted - about 5 minutes.

Carefully remove kale chips off of baking sheet. Either put lemon juice in a bowl for dipping or put the kale in a zip bloc bag and shake gently with lemon juice. Store in airtight container
