Crumble beef into casserole dish

Drain off fat, reserve

Stir 1 cup of cheese and olives into meat and set aside

In a casserole dish, blend tomato paste, enchilada mix, flour, and grease

Stir in water

Cover and cook on high for 8 minutes

Pour 1 cup prepared enchilada sauce over bottom of baking dish

Dip tortilla into remaining sauce, spoon some meat mixture into center of tortilla

Fold sides of tortilla over filling and place into baking dish seem side down

Do the same for the remaining tortillas, pour any remaining sauce over, and sprinkle with remaining cheese

Cover with plastic wrap and cook on medium for 8 minutes

Rotate and cook on medium for 8 to 10 minutes longer
