wash the pork tenderloin

Place bacon strips next to each other flat on the cutting board

Place both tenderloins across the strips of bacon

Wrapped in bacon halfway around 1 tenderloin tucking in between the two tenderloin and overlap with the next piece

Once you have bacon wrapped around your tenderloin then mix your spices and shake liberally onto the wrapped loin

After seasoning has been put on place in smoker

Smoke at 250°F Fahrenheit for 2 to 3 hours

I threw a small bbq party for a couple of friends the other day. While shopping I picked up a pork tenderloin just because it was on sale. When I got home I didn't just want to throw it on the grill as I usually do so I started thinking. Now I know there must be tons of these recepies out there, probably even close to identical to this, but since I prefer going on my gut instinct instead of following recepies I'll still call this my own... Well, I just made 10 lbs of home smoked bacon. This is the first thing I have made with it. To be honest I bought the crema at Kroger's feel free to use whatever you think will taste good. The pork is the star in this dish. I also used the bacon to wrap the asparagus. I served this on top of toasted pine nut cous cous. wingmaster835 -
