Ingredients

  1. lemon dressing mixture
  2. 1 1/2 tbsplemon zest (1 lemon)
  3. 2 tbspfresh lemon juice
  4. 1/4 cupolive oil
  5. 4 clovegarlic, minced
  6. 1 tbsporegano
  7. 1 tspsalt
  8. 1/2 tspground black pepper
  9. main ingredients
  10. 3chicken breasts
  11. 5red potatoes
  12. 1red pepper, cut into strips
  13. 1onion, cut into strips
  14. 8 ozwhole mushrooms, cut in half

    Preheat the oven to 400°F

  2. 2

    Mix lemon zest, lemon juice, olive oil, garlic, oregano, salt, and ground pepper together.

  3. 3

    Grease bottom of a 9x13 pan. Place chicken breasts in pan and spread half of the lemon dressing mixture over the chicken breasts.

  4. 4

    Cut up vegetables and mix with remaining lemon dressing mixture. Pour vegetables around chicken and bake at 400°F Fahrenheit for 1 hour. Check halfway through cooking time and stir vegetables to make sure they cook evenly.
