This is one of my favorite Mexican side dishes, and I stole this recipe from my mom... Even if Chiles Poblanos are chili peppers these are not very spicy.

This is one of my favorite Mexican side dishes, and I stole this recipe from my mom... Even if Chiles Poblanos are chili peppers these are not very spicy.

If you buy frozen vegetables wait until they're unfrozen.

Heat a large pan with the oil. When it's hot add the sliced onions at medium heat, until they're golden.

Add the corn and the pepper rajas (chili pepper strips). Stir to cook evenly.

After 3 or 4 minutes add salt, ground pepper ans the chicken stock made power. Mix and stir until the stock power dissolves.

Keep cooking for 8 - 10 minutes. All the liquids should evaporate and the dish should be dry and a bit brown. Optionally you can add some drops of lemon juice just before serving.
