Boil a pot of water (enough to completely submerge the potatoes).

Meanwhile, peel and cut the potatoes into rough 3 cm cubes/quarters.

When the water is boiling, add the potatoes in and allow them to cook for 30 minutes or until they can easily be poked through with a fork.

Drain the potatoes and place then into a large bowl.

(This is the most important step for a smooth mash) Begin to mash your potatoes which either a masher or fork. Do not add anything until you are completely satisfied with the consistently of the mash.

Add the butter and mix it around until it has all melted and mixed into the mash.

Finally, stir in the chives into the mash and serve immediately.
