Homemade potato soup
This is my momma's homemade recipe.
Steps
- 1
Boil potatoes and onions in a large stock pot, until potatoes are well done.
- 2
Pour most of the water off leaving a little water in the bottom (about 1/2 cup), try not to loose any of the onions.
- 3
Set aside.
- 4
While the potatoes and onions are cooking you can line a baking sheet with aluminum foil and lay bacon in a single line and cook until nice and crispy (about 325°)
- 5
After potatoes, onions, and bacon ( make sure you drain bacon) are done. Crumble the bacon up and put in the pot with the potatoes and onions.
- 6
Then add remaining ingredients and Heat until bubbly.
- 7
You can garnish with some of the crunchy bacon and cheese.
