Pea and Pancetta Pasta Risotto

I don't really like risotto, but this pasta recipe from Nigella Lawson is so delicious I make it at least 2 or 3 times a month for a quick weekday supper when I've forgotten to plan, and we're hungry. It's all in one pan, it's made from storecupboard ingredients and it's really really simple. Orzo pasta looks like rice and releases its starch to make a creamy sauce without the clagginess of a rice risotto. The measurements are really forgiving so use more or less of anything and you'll still end up with a successful dish.

Ingredients

  • Olive oil
  • 1onion, peeled and chopped
  • 1 packetpancetta lardons (about 75g)
  • Dried sage (or rosemary, thyme or a mixture of all of them)
  • 1 clovegarlic (if you want)
  • 1 splashdry white wine or dry vermouth (optional)
  • 1 cuporzo pasta, about 200g
  • 1 cupfrozen peas
  • Couple of handfuls of grated Parmesan
  • 1 knobbutter and a squirt of lemon juice, to serve

    I usually use a cast iron frying pan for this but it works fine in a heavy-based pan too. Heat a splash of olive oil and saute the chopped onion and pancetta until soft and slightly browning.

    Add the dried herbs, garlic, white and black pepper and stir to release the aromas.

    Add a splash of dry vermouth, or dry white wine (although you don't have to, I don't think Nigella does), and stir so any sticky bits at the bottom of the pan are released.

    Add the orzo pasta and stir to coat in the oil, then add 2 and a half cups (the same cup you measured the pasta in) of cold water, and a splash of chicken stock. You can also use vegetable stock, or just water.

    Let the risotto bubble gently, stir from time to time to prevent it sticking on the bottom. When the stock/water is nearly all absorbed, add the peas, and a little more water if needed, until the pasta is tender, about 8 to 10 minutes in total.

    Grate some Parmesan cheese - up to you how much, I used a couple of handfuls, stir through the pasta together with a squeeze of lemon juice and a knob of butter if you wish (I forgot). Check the seasoning and serve with a green salad. So speedy!

I enjoy cooking mostly because I like eating, but also because it's a great way to relax at the end of the day. I work in book publishing and especially enjoy creating cookbooks written by cooks who love cooking and sharing food rather than creating show stopping dishes that take days to put together. As Nigel Slater would say; 'we are, after all, simply making ourselves something to eat'. I live with my lovely daughter Isobel who rarely pays any kind of compliment but will occasionally admit something I've cooked was quite nice, and our dog Piper, who will eat anything.
