Use 2 cups of dried cooked beans or 2 cups canned beans rinsed and drained. Use stewed Italian tomatoes. If not seasoned use 2 Tbsp Italian seasoning.

Use 2 cups of dried cooked beans or 2 cups canned beans rinsed and drained. Use stewed Italian tomatoes. If not seasoned use 2 Tbsp Italian seasoning.
Steps

In dutch oven saute onion & celery in olive oil for 5 minutes. Add the chilies, garlic, chili powder, cumin, & coriander. Cook 1 minute longer.

Stir in beans, tomatoes and broth/beer and bring to a boil. Reduce heat and simmer, uncovered for 15 minutes. Stirring often.

Served topped with shredded pepper jack or sharp cheddar cheese and fritos w/chopped green onion garnish.

Top with dallop of cour cream

Serve with corn bread
