Place all the ingredients except the toasted bread in a pot over heat. Add the parsley. When it comes to a boil, reduce the heat and simmer for 30 minutes.

Transfer the mixture to a blender and blend until smooth and thick. If it is too thick, add a little water to reach your desired consistency.

Return the soup to the pot and add the juice of the lemon you zested. Simmer on low heat for 10 more minutes.

Serve in bowls topped with fresh parsley and some toasted bread.
