Warning: This recipe is highly addictive!
Inspired by the idea of "breakfast bowls", I made this so I could cook it in bulk and reheat it for the week. They reheat well. It's great by itself or as a filler for meal prepping breakfast burritos.
Reheat instructions:
1. Place 1 serving on a plate
2. Cover with a paper plate face down to trap in steam and prevent splatter
3. Microwave 30 seconds
4. Flatten with a fork to allow it to cook evenly
5. Microwave 30 seconds
6. Enjoy

Place tater tots in a large nonstick skillet and cover with lid.

Set stovetop burner for the tater tots to Medium (5).

Set oven to 400 degrees.

Place bacon on a nonstick or foil covered tray and bake for 15 mins

While bacon is cooking, mash the tater tots together.

Remove bacon from oven. While it is hot, carefully drain the excess maple bacon grease into the skillet with the tater tots.

Set burner to Medium-High (7).

Pile the bacon up and use a pizza cutter to cut the bacon into small pieces.

Mix bacon in with the Tater Tots.

Add eggs.

Mix until eggs are cooked to desired consistency.

Turn off heat and add cheese.

Mix until cheese has melted.

Remove skillet from stovetop and transfer contents to a storage container to cool. Enjoy.
