Ingredients

  1. 750 gramschicken drumsticks/thigh
  2. 3garlic cloves, minced (I use garlic press)
  3. 1 teaspoonsalt
  4. 1/4 teaspoonground white pepper
  5. 1/2 teaspoonsesame oil
  6. Frying oil
  7. For the salt and pepper mixture :
  8. 3garlic cloves, finely chopped
  9. 3dried chilies, finely chopped
  10. 3green onion/scallion, thinly sliced
  11. 1/8 teaspoonsalt
  12. 1/8 teaspoonsugar
  13. 1 teaspoonground white pepper
  14. 1/2 tablespoondried shrimp, soaked until soften then finely minced
  15. 1 tablespoonoil

Cooking Instructions

    Mix the garlic, salt, white pepper and sesame oil. Rub the mixture to the chicken pieces. Cover the bowl and put it in the refrigerator for an hour.

    Heat the oil to 350°F. Fry the chicken until crispy and golden brown, make sure they are fully cooked. Set aside.

    In a frying pan, heat 1 tablespoon oil. Saute the garlic and dried chilies until fragrant (be careful not to burn the garlic). Add green onion, salt, sugar, white pepper and dried shrimp. Mix well for a few second then add the fried chicken and gently toss everything for a few second. Serve.
