Cooking Instructions

Peel and cut the potatoes into irregular pieces, which is the traditional way for patatas bravas. Gently boil them in plenty of salted water (the water should not be at a rolling boil) for about 10 minutes.

Meanwhile, slice the garlic and remove the seeds from the chili pepper, then chop it. Adjust the amount of chili to your preferred spice level. In a pot, slowly sauté both ingredients in olive oil to bring out their full flavor.

At this point, drain the potatoes and set them aside. Add the remaining vegetables to the pot and sauté over medium-high heat for about 10 minutes.

Once the vegetables are cooked, add the chopped tomatoes, salt, black pepper, and a pinch of sugar to reduce acidity. Let the sauce cook slowly for another 10 minutes.

While the sauce finishes cooking, fry the potatoes in plenty of olive oil until golden brown. Drain them and place on paper towels.

Finally, blend the sauce until smooth. Adjust salt, pepper, or sugar to taste. Serve the potatoes with a pinch of salt and top with the brava sauce as desired. Enjoy—these are a real treat!

Patatas bravas--crispy potatoes served with a spicy, paprika-forward tomato sauce--are standard fare at any tapas restaurant. As simple as they are to make (and they really, really are simple), there's a lot of variation in the method. The recipe below includes my personal preferences. I use mini creamer potatoes, first because I like the texture, and second because they're easier to prep (i.e. just cut 'em in half). Next, I shallow fry my patatas. Again, this is for simplicity. I see no reason to pull out the deep fryer just to crisp up a few potatoes. Lastly, I like to mix a little mayo into the bravas sauce. I find it rounds out the flavour.
