Peel your potatoes and cut into bitesize pieces (Spanish secret is to cut 80% and then break off the last part of each piece, adds flavour apparently). Then get pan. Use large/deep saucepan.

Heat a few dashes of olive oil and add chopped garlic. (Medium heat not to burn garlic) 1 min

Take half an onion and separate the layers. Add to the pan whole and stir. 3 mins

Take chopped potatoes (bitesize pieces) and add to pan. Fry for 3 mins, stirring regularly. Add the pimentón dulce.

Add the slices of chorizo sausage (as much as you want). Fry for 1 mins.

Add boiling water until ingredients are just covered. Place on high heat to simmer. Leave 15-20 mins. Reduce heat as water reduces. Stir occasionally

check potatoes are cooked. (Should fall apart easily once you remove from pan) . Add salt and pepper to taste. remove from heat and cover to let it settle 5/10 mins.

Serve in bowl with a spoon. Add some nice bread to dip.
