Peel, clean and slice the karelas lengthwise. Next boil the karela for about 5 mins in water, to which a pinch of turmeric and salt has been added. Drain away the water and put the karela pieces in a plate to cool down a lil.

In the meanwhile grind and make a paste of peanuts, dry desiccated coconut, green chillies, coriander, adding a lil water. The paste should neither be too coarse nor too fine.

Add the masala paste to the cooled down karela.

Add in red chilli powder, coriander powder, cumin powder, garam masala powder and a lil oil. Mix it well, so that the masala sticks to the pieces.

Marinate it for about 10 mins and then shallow fry it.

That’s it your karela fry is ready to eat. Can be had with chapati or also as a side with dal and chawal.
