Mike's Mexican Grilled Chicken Salad

I was served this dish in Mexico City years ago. While I was a bit confused by some of the ingredients, it was fantastic! Since then I've tried to recreate it. Well, I finally nailed it. This salad goes great on so many dishes. Especially any Mexican dish you can think of. I love it with sturdy salty tortilla chips. Excelente trabajo estudiantes!

Mike's Mexican Grilled Chicken Salad

  2. 1 (8 oz)Bag John Soules Grilled Chicken Breast Strips
  3. ● For The Mexican Salad
  4. as neededQueso Fresco Cheese [to top]
  5. 1 CanBush's Black Bean Fiesta
  6. 1 CanDrained Sweet Corn
  7. 1 CanDrained ROTEL
  8. 1 (4 oz)Can Hatch Green Chilies
  9. 2LG Desedded Jalepenos
  10. 1 BunchCilantro Leaves
  11. 1LG Peeled Cucumber
  12. 2 tbspFine Minced Garlic
  13. 1/2LG Desedded Green Bell Pepper
  14. 1/2 JarRoasted Red Bell Peppers
  15. 1 CupThin Sliced Cabbage
  16. 1 CanDrained Black Olives
  17. 1EX LG Firm Deseeded Chopped Tomato
  18. 1Medium Chopped White Onion
  19. 1Small Chopped Red Onion
  20. 2Green Onion Stalks
  21. 1 CanDrained Artichokes
  22. 1/2 CupBaby Carrots
  23. 1 tbspFresh Lime Juice
  24. 1 tbspGround Cumin
  25. as neededRipe Avocados [served to the side]

Cooking Instructions

    Here's what you'll need.

    Chop all of your vegetables and add spices and canned goods. Gently mix. Chill for 2 hours.

  3. 3

    If interested, make my, "Mike's Avocado Jalapeno Cilantro Dressing Or Dip," to go with this dish and chill.

  4. 4

    Serve on tacos, burritos, nachos, etc, or to the side of any Hispanic dish. Enjoy!
