Wash the vegetables and keep aside.

Take a nonstick pan heat on add, cumin, coriander, fennel seeds, mustard seeds, black peppercorns roast on low flame for 3-4 minutes and then grind it keep aside.

Slit the vegetables and prick the baby potatoes and Arbi with toothpick.

Half shallow fry all the vegetables and drain on the kitchen tissue.

Take a nonstick pan add 1 tbsp mustard oil add onion saute for 1 minutes add tomato and green chilli & roasted spices mixture stir well.

Add salt, dry mango powder, turmeric powder, garam masala powder mix well.Cook for 5 minutes heat off.

Take a Tava on low flame add 1 tbsp oil and Fill each the vegetables with this stuffing and place on the tawa. Potato and arbi and cauliflower coat nicely into the mixture and place on heated tawa.

Roast the vegetables till crisp.

Ready to serve Tava veg as a side dish...
