A true classic in the kitchen. You can make this egg flan using a pressure cooker, regular pot, oven, or microwave. After trying this recipe, you'll say goodbye to store-bought mixes because it's so quick and easy. It only uses 3 ingredients, but if you like extra flavor, you can add cinnamon, coconut, vanilla, coffee, or any flavor you prefer. This is a Spanish recipe.

Steps

15 min + refrigeration
  1. 1

    For the caramel:
In a saucepan, combine the sugar and water. Cook until it turns a golden color. Pour the caramel into the flan mold and set aside.

  2. 2

Pressure cooker: In a bowl, beat the eggs and sugar. Add the milk and beat again. Pour the mixture into the flan mold and cover it. Add about 1 1/4 inches (3 cm) of water to the pressure cooker and place the flan mold inside. Close the cooker and cook for 5 minutes after it starts to whistle. Once done, let it cool to room temperature, then refrigerate for about 5 hours.

  3. 3

Regular pot (water bath): Add enough water to reach about 1 1/4 to 1 1/2 inches (3–4 cm) up the side of the flan mold. Cook for 1 hour over low heat, making sure the water does not boil vigorously.

  4. 4

Oven: Place the flan mold inside a larger oven-safe glass dish and fill the outer dish with water halfway up the side of the flan mold. Bake at 350–375°F (175–190°C) for 1 to 1 1/4 hours with both top and bottom heat, keeping the flan covered with a lid or aluminum foil.

  5. 5

Microwave: Use a silicone, Pyrex, or glass mold. Microwave uncovered at medium power (450–500 W) for 10 to 15 minutes. Check if it is set by seeing if it has firmed up.

  6. 6

To unmold, run a knife around the edge, gently loosen the flan, and invert it onto a plate.
