Spinach muffins are my favorite . you can use variety of veggies to make this if you don't want to use spinach. Here I have used tomatoes,onions and spinach only.

Spinach muffins are my favorite . you can use variety of veggies to make this if you don't want to use spinach. Here I have used tomatoes,onions and spinach only.
Steps

Preheat oven to 350 degrees F. Grease mini muffin pan with oil.

Take the onion, tomatoes and spinach in a bowl.
- 3
Whisk eggs, salt,herbs and chilli flakes into the bowl.
- 4
Pour mixture into muffin pan, filling each cup about 3/4 full as the eggs will rise when they cook.

Bake muffins 9-11 minutes, or until set. Allow to cool for a few minutes and with a spoon scoop out from the muffin pan.
