Ingredients

5 Ghevars
  1. 1 cupAll purpose flour
  2. 1/4 cupghee
  3. 1/4 cupchilled milk
  4. 3 cupchilled water
  5. 1/2 tsplemon juice
  6. cubesFew ice
  7. Oil for deepfrying
  8. Dry fruits for garnishing
  9. For sugar syrup 1 cup sugar and 1/4 cup water,elachi powder

Steps

  1. 1

    First take ghee and rub with ice cubes.it will become smooth and creamy and soft texture

  2. 2

    Now add flour and crumble well.
    further, add chilled milk and give a rough mix.additionally, add chilled water, lemon juice and make a smooth flowing consistency

  3. 3

    Pour the 2 tbsp of batter keeping a good distance from hot oil.i would suggest to take flat and heavy bottom sauce pan to heat oil. It will give perfect shape. And yes pouring with good distance is hack for perfect Ghevar

  4. 4

    The batter will splatter and later the froth subsides. repeat 10-15 times

  5. 5

    Pull the ghevar out once cooked, and drain off the oil completely.

  6. 6

    Pour the sugar syrup over ghevar, garnish with chopped nuts and sprinkle cardamom powder.

  7. 7

    Garnish the ghevar with rabri and ready to serve
