Apple butter baked oatmeal

I went on a rafting trip recently and on the way we stopped at this gas station on the way that had a cafe attached. I had this baked oatmeal that was outstanding. We had a busy day and didn’t get to eat until 3pm. The oatmeal fueled me for the whole day. I decided to start incorporating baked oatmeal into my weekly food routine. This recipe uses quick oats and baking mix from Kodiak cakes. I subbed in apple butter for flavor and moisture in lieu of eggs. For the milk and sweetness I used a pint of vanilla halo top. This batch gave me 12 servings

Ingredients

  1. 2 cupsquick oats
  2. 1 cupKodiak cake baking mix
  3. 1/2 cuptruvia brown sugar blend
  4. 1 pinthalo top vanilla bean ice cream
  5. 2 tspcinnamon
  6. 1 tspsalt
  7. 3 tbspapple butter
  8. 1/4 cupchopped walnuts

Cooking Instructions

  1. 1

    Combine your dry ingredients in a mixer

  2. 2

    Add in melted ice cream and apple butter

  3. 3

    Add in walnut chips and brown sugar

  4. 4

    Divide evenly into muffin

  5. 5

    Bake at 350 for 15-20 minutes.
